The Best Salad

If you are like me, a college student that is always in a hurry, then this is the perfect recipe for you! This salad bowl is the absolute best because you can make enough in advance for the entire week and there are so many different variations of it you can make so you will never get sick of it! I also love it because there are no measurements needed so you can just use what you have in your apartment pantry and fridge!

  • First, I start by making my base of the salad. I usually cook 2 cups of brown rice in my rice cooker which you can find here on Amazon! Or I cook 2 cups of quinoa on the stove! Once my base is done I set it aside and put it in the fridge!

  • Next, I choose my “toppings”. This is where it gets fun because there are so many variations you can make! Here are some of my favorites!

    • Quinoa Base

    • Sliced Strawberries

    • BelGioioso Fresh Mozzarella Ciliegine - “Cherry Size” (I usually cut them in quarters)

    • Spinach

    • Top with Balsamic Vinegar!

    • Sliced Cherry Tomatoes

    • Basil

    • Top with Balsamic Vinegar!

    • Quinoa Base

    • Diced Red Pepper

    • Black Beans

    • Top with Lime Juice! (you can also add cilantro but I’m not a fan!)

    • Rice Base

    • Diced grilled chicken (I get the frozen ones)

    • Steamed Broccoli (I get the frozen kind)

    • Minced Garlic

    Directions - Microwave chicken & broccoli if frozen. Then add about 1 TSP of any oil to the pan and sautee chicken, broccoli, and garlic on the stove. Once cooked - add to the rice and enjoy!

    • Spicy Tuna Salad

    • Rice Base

    • Can of Solid White Albacore Tuna in Water Shredded

    • Sliced Avocado

    • Top with Kewpie Mayo and Siracha

    • Rice Based

    • Chopped Cilantro

    • Salsa

    • Sour Cream

    • And of Course Guac!

 

These are just some of my favorites but the opportunities and varieties are endless!
